Bubble & Squeak
This recipe is the ultimate use for leftover mashed potatoes or cabbage. Growing up in England, THIS was the day after New Years staple. On the first, we would always prepare the tradition meal of Corned Beef and Cabbage with mashed potatoes, a nice brown mustard and fresh horseradish. The next day, if there were any leftovers, this would be first on the list of meal prep items for the day.
This classic British comfort food gets its name from the cooking process. The mixture bubbles as it cooks and the cabbage makes a squeaky sound.
The basic recipe calls for cabbage or brussels sprouts, onion and garlic though I have eaten them with leftover root vegetables, corned beef, lamb or even duck added. You get bonus points for throwing a fried egg on top. Enjoy!

The Recipe
Bubble & Squeak
- 4 pounds yukon gold potato (or 6 cups leftover mashed potatoes)
- 1/2 large onion, diced
- 3 cloves garlic, minced
- 2 Tbsp extra virgin olive oil
- 3 cups diced cabbage
- 2 whole eggs
- 1 Tbsp salt
- 1 Tbsp black pepper
- 1 cup all-purpose flour (or you may substitute gluten free flour mix or cassava flour to keep this recipe gluten free)
- Cut potatoes into small pieces and boil until tender.
- While potatoes are boiling saute onions are garlic for 4 minutes on medium heat in olive oil, stirring occasionally to keep from burning.
- Add cabbage and saute for another 3-4min.
- Drain potatoes and mash into cabbage mix, let cool completely.
- In a stand mixer with paddle attachment (or by hand) mix the egg and flour into the potato-cabbage mix until you have a thick, dough like consistency (you may add more flour if it is too runny to form patties).
- Form some biscuit size balls of your potato mixture.
- In a saute pan melt a decent amount of butter (olive oil is fine) and place potato balls into the pan.
- Carefully press on the top of the potato ball with your hand or a spatula to get flatten the balls into a puck shape.
- Saute on medium heat for 3-4 min or until they are golden brown on one side. Flip and repeat.
- Repeat this saute process for remaining potato mix.
