lime cilantro slaw
Cilantro is my favorite herb. I use it more than any other, especially because I make Mexican inspired food the most. A few years ago, I made this recipe on the fly to go with tacos and it remains the recipe that I make the most often.
While it is amazing with tacos, it is also a great addition to black bean tostadas, grilled chicken or fish, barbecue pulled pork and so much more. I also love it because it is quick and easy to make, while being carb friendly and fairly healthy.
The Recipe
Lime Cilantro Slaw
- 1/2 head of cabbage, thinly sliced or grated
- 20 cilantro sprigs, de-stemmed and minced
- 2/3 cup mayonnaise
- 1 lime, juiced
- 1/4 white onion, finely chopped (optional)
- 1/4 tsp salt
- 1/8 tsp black pepper
- Place the cabbage, minced cilantro, mayonnaise, lime juice, onion, salt and pepper in a mixing bowl.
- Mix together until slaw is evenly coated. Season more, if needed. Chill and enjoy.
